Zippy’s Fried Chicken Recipe – Hawaiian Copycat Recipes



Being from Hawaii myself, I practically grew up on Zippys fried chicken. Whether you live outside of Hawaii or you are local and just simply want to make it at home, give this Zippys fried chicken recipe a try and you won’t be disappointed.

1 3-4lb fresh whole fryer chicken
2 cups wheat flour
1 Tbsp garlic powder
1 Tbsp paprika
2 tsp white pepper
1 Tbsp MSG
2 tsp fresh cracked black pepper
2 large pinches of coarse Hawaiian rock or kosher salt
canola oil (enough for deep frying)
warm water (enough to cover chicken)

Rinse and cut chicken for easy frying. Put well rinsed chicken into a clean bowl and cover with warm water. Add rock salt to create a salty brine in which you will soak the chicken for about ten minutes. Drain in colander. Do not rinse.

In a second mixing bowl mix all of the dry ingredients. Mix thoroughly, being sure to remove any flour lumps. Dredge chicken parts well in the dry ingredients, being sure to cover the whole piece. Set aside.

Heat enough canola oil to cover chicken pieces to between 350 – 375 degrees F. Add chicken in several batches for approximately 15 minutes each or until golden brown all over. Drain on paper towels.

Tip: Add a bit of cornstarch for crispier chicken.
